鹵未熟蛋

The eggs are boiled in salted water till half-boiled, cracked and peeled, then soaked in a mixture of soy sauce and rock sugar for a couple of days. See that the edges of the eggs are not smooth, also note that the hard-boiled two halves are the only smooth ones, it is just so hard to get it right, the soft-boiled eggs are so tightly attached to the shell.
